I have 2 Darto pans and plenty of others already so hard to say this is a pan or size I need. I currently have the matfer 11 7/8 and I LOVE it. 6 in) - External diameter- 23 cm (9 in) - Internal diameter (flat cooking area)- 3 mm (1/8 in) - Thickness- 296 lbs) - Weight- 100% carbonsteel- Color grey (once seasoned they turn dark gray to black)- Pressed into a single laminated carbonsteel of 3mm thickness with no welds. Leftover gluten-free pancake mix from Japan, loaded with cinammon and some raisins, cooked on bacon grease plus a little ghee on the gas range, broiled in the oven and finished on the gas range with butter. This is a very high quality one piece carbon steel pan. The reasoning is because it comes preseasoned and for some reason Lodge decided to texture their CS like a CI. But so much rougher. I currently own an 11" De Buyer mineral B and am in need of more cooking space and go-to oven roaster. Any recommendations on how to get there? I already made banana pancakes in the n20 and fish in the n30 and none of it stuck to the pan!!! Darto pans are single-piece construction. this means they use differently alloyed layers of CS and so there could be some performance issues or potential compromising of the intended thermal efficiency of the pan, whereas a uniformly layered CS pan (e 1% carbon throughout) is not going to amount to any kind of difference. It's ideal for paella because carbon steel conducts heat quickly and evenly. These are a consequence of the rusticity of the manufacturing process that the carbon steel goes through and do not affect the functionality of the product. 42 votes, 17 comments. Some of the other posts on here look like they're deep frying in their pan lol. Keeping a pan carbon free when you first start cooking is crucial, and it's pretty low effort, so I highly recommend. Diminishing returns and all that. I wanted a 12" skillet and was looking at all kinds of carbon steel, cast iron and even stainless steel pans.
